ORANGE POLENTA FINGERS

I have been banging on about polenta for quite some time now and decided, after eventually finding it in the supermarket... It's down the rice aisle or hidden away with the nuts, that I was ready to dabble with a little bit of this corny goodness.




What is polenta? It is a ground corn and used in various ways for porridge, a kind of mashed potato or for what I am using it for, cakes.

I have decided to combine this cake with some orange flavours, both in the mixture and as a drizzle but you can use lemon if you wish.


250g golden caster sugar
250g butter
150g polenta
4 eggs
200g plain flour
2 teaspoons of baking powder
2 oranges - zest them and squeeze the juice into a separate jar.

100ml orange juice
100g caster sugar

Here we go... It's really simple and hardly any mess!

Cream the sugar and butter together until light and fluffy.


Then pop in one egg at a time and mix until its all smooth.



Now add all your dry ingredients which is the polenta, flour and baking powder. Give it a real big mix.


Add in your zest and all but 100g of your juice from your oranges and you're done.





You can never get enough juiced orange photographs!



I have used a brownie tin because I want to make little fingers of polentary goodness.



Give it all a little flatten to even it out.


Put in the oven for 35mins and then take out to cool.


For the yummy glaze heat the sugar and juice in a saucepan and bring to the boil. Then simmer for a good 5 minutes. Drizzle this over the cake and you are all done.


See, ever so simple!!


I  have decided to not jump straight into using only polenta, as I'd like to try out other new ingredients. Do stay posted for more polenta recipes though, as it was so simple to use.
